Sydney's Coolest Pop-Up Bar: Icebergs Harbour Bar
The iconic Bondi Beach bar is in residence at Crown Sydney for the summer


Icebergs Dining Room & Bar is a Sydney institution - having opened on Bondi Beach in 2002 and being consistently recognised as one of Australia's most iconic dining rooms and bars.
For the summer season, Icebergs founder Maurice Terzini is taking the concept to the Crown Sydney hotel, launching Icebergs Harbour Bar - an oceanic-inspired pop-up bar serving elegant cocktails and European-Australian influenced snacks.
Drinks include the Harbour Bar Martini - a coastal take on the hotel bar classic, the Gibson - with Papa Salt Gin, dry vermouths, bitters and pickles; a fresh Yuzu Spritz; and the Icebergs staple, the No. 8 - featuring vodka, Campari and ruby grapefruit, among other creative pours.
The food menu includes small plates such as Sydney rock oysters and long pepper mignonette; vodka battered zucchini flower, lamb merguez and salsa verde aioli; and Jamón Ibérico and wasabi melon. Club Sandwich; an Icebergs signature burger; and a salt baked celeriac, Bruny Island C2 (cooked cured cheese), confit egg yolk and almond crumb are more substantial options.
“I have always had a love affair with great hotel bars; they’re transient and fun and you never know who you’re going to meet," says Terzini.
